In London, England, there’s a restaurant called Native that serves lasagna and a croquette made with gray squirrel meat. As The Sunday Telegraph reports, chef Ivan Tisdall-Townes considers squirrel to be “tasty,” “good for you” and “one of the most sustainable proteins you can cook.” Furthermore, the fact that there aren’t many predators left in England to thin the enormous gray squirrel population has led to a decline in red squirrels, which gray squirrels often kill. Hence, Tisdall-Townes considers his unusual culinary affinity to be a way of saving an endangered species.
